Traditionally, making chakli involves washing, drying, roasting and grinding a mix of lentils and rice into a flour called bhajani - process that can take days. This instant version of homemade chakli skips the tedious prep work entirely by using store-bought rice flour, gram flour (besan) and plain flour (maida) while still delivering that signature crunch, beautiful spiral shape, and irresistible flavor.

Why You’ll Love This Instant Chakli Recipe

  • Zero prep time - No grinding required: No whole grains to wash, dry, roast or mill into flour. Made entirely with easily accessible, ready-made flours.

  • Ready in minutes: It's incredibly fast. Just mix the dough, shape, and fry.

  • Beginner friendly: Uses readily available pantry flours and holds its spiral shape in the oil without breaking.

  • Foolproof crunch: The ratio of flours combined with hot ghee rubbed into the dough, guarantees a light and crunchy texture.

  • Customizable heat: Easily adjust the red chili powder to make it kid-friendly or extra spicy.

Ingredients You'll Need for this Easy Chakli Recipe

To get that perfect texture and authentic taste, you only need a few pantry staples.

Rice Flour: Provides lightness and crispiness.

Besan (Gram flour): Binds the dough and adds a rich, nutty flavor.

Plain flour (Maida): Improves the dough's binding, texture, and workability. Prevents the dough spirals from cracking or breaking apart as you pipe them through the star-shaped chakli press.

Carom Seeds (Ajwain): Aids digestion and gives a distinct savory flavor.

White Sesame Seeds (Til):  Adds texture and a slightly sweet, nutty aroma.

Instant Chakli ingredients - three large bowls of flour and six small spoons of spices on a marble surface, arranged neatly in a colorful overhead food display

Cumin Seeds (Jeera): Adds an earthy aroma.

Asafoetida (Hing): Essential for that traditional savory aroma.

Turmeric Powder (Haldi): Gives the chakli a beautiful golden hue.

Red Chili Powder: Adds color and heat (adjust to taste).

Coriander (Dhaniya) Powder: Provides a warm, earthy undertone and balances the sharper pungent spices.

Hot Melted Clarified Butter (Ghee): Rubbing this into the flour is crucial for a flaky, melt-in-the-mouth crunch.

Pro Tips for the Perfect Crispy Chakli

  • Incorporate the Fat (The Crucial Step): Carefully pour the hot ghee over the dry flour mixture. It should sizzle slightly. Mix it gently with a spoon first. Once it's cool enough to handle, use your fingertips to rub the oil thoroughly into the flour for a few minutes. Then using both your hands rub the mixture well to properly combine ghee and flour (as shown in the video). Ghee should get well incorporated in the flour.

    • The Binding Test: Take a small handful of the mixture and squeeze it in your palm. It should easily hold its shape and form a rough ball (as shown in the video). This step is what makes the chakli crispy rather than hard.

  • Nail the dough consistency: Slowly add little water at a time and begin bringing the dough together. You want a smooth medium consistency dough; it should be firm and pliable -neither too tight nor too sticky/soft.

If your dough spirals are constantly breaking while shaping, your dough is too dry. Sprinkle a few drops of water and knead again. If the spirals look messy and won't hold their ridges, the dough is too wet; add a little rice flour.

If the dough is too dry, stiff, and crumbly chaklis will break while shaping. If the dough is too soft and sticky chaklis won’t have sharp spikes and will soak up too much oil, lose their shape and disintegrate while frying.

  • Shaping the Chaklis: Lightly grease the inside of your chakli maker and the star-shaped disc with a few drops of oil. Take a cylindrical portion of the dough and pack it tightly into the chakli maker to eliminate air pockets. Press it down tightly to fill up all the space and tighten the lid. Do not leave any gaps in chakli maker or the chaklis might break while shaping.

Cut small squares of butter / parchment paper (this makes transferring chaklis to the oil much easier).

  • Gently press the chakli maker in a circular motion over the butter / parchment paper to form tight, concentric spirals. Start from the centre and work outwards to form 3-4 tight rings.

Only shape few chaklis at a time. Make spiral rounds as close to each other as possible so that chaklis maintain proper shape during frying.

Important: Stick the inside and outside edges so that they don’t open while frying.

  • Cover the resting dough: While you are pressing and frying batches, keep the remaining dough covered with a lid so it doesn't dry out.

  • Deep Fry to Perfection: Heat your frying oil in a deep kadhai or pan. To check if the oil is ready, drop a tiny piece of dough into it. It should sink slightly and then rise steadily to the surface with an active sizzle without browning instantly.

  • Temperature control is everything: Frying on high heat will brown the chaklis quickly on the outside while leaving the inside raw and uncooked and turn soft after cooling. Frying on low heat will cause them to absorb excess oil and become incredibly heavy and fragile. Stick to a steady medium heat.

  • Fry few at a time: Do not overcrowd the pan. Only fry few chaklis at a time in hot oil on medium heat setting. Do not touch them till they get fried a bit and firm up and start floating on top. Then gently flip them over and fry till sizzling sound of the oil reduces significantly (this indicates the moisture has gone and they are crispy), bubbling subsides and the spirals turn a deep, even golden hue. Do not fry till the color becomes very dark as the color of chaklis will continue to darken as they cool down.

  • Drain and remove on a paper towel. Your Instant Chaklis with sharp spikes are ready. They are so light, crisp and crunchy that they just crumble upon pressing. Let them cool down completely before serving.

Troubleshooting Common Chakli Problems

  • Chaklis breaking while shaping?

The dough is too dry. Mix in 1 to 2 teaspoons of water, knead thoroughly, and test again.

  • Chaklis disintegrating or melting in the oil while frying or absorbing too much oil?

Dough is soft and too much water was added while kneading. Rescue the batch by mixing in 1-2 tablespoons of dry rice flour to the remaining dough, knead it lightly, and try again.

  • Chaklis soft or chewy after cooling?

The oil was either too cold (causing oil absorption) or too hot (browning the exterior before the core dried out). Fry steadily on medium heat until the vigorous sizzling quietens down. Only fry few chaklis at a time to maintain oil temperature.

Frequently Asked Questions

  • Why is my chakli breaking while shaping?

Chakli breaks while shaping when the dough is too dry and lacks sufficient moisture. To fix this, sprinkle 1 to 2 teaspoons of water into the dough, knead it thoroughly until it becomes smooth and pliable, and pipe again.

  • Why does chakli turn soft after frying?

Chakli turns soft if fried on high heat or removed before the internal moisture fully evaporates. Fry over a steady medium heat until the oil stops bubbling. Always let them cool completely to room temperature before storing in an airtight container.

  • How do you fix chakli that breaks in oil?

If chakli disintegrates or absorbs too much oil while frying, the dough contains too much water. You can rescue the remaining batch by kneading 1 to 2 tablespoons of dry rice flour into the dough to absorb the excess moisture.

  • Why did my chakli turn out very hard?

This usually happens if there wasn't enough hot melted ghee (clarified butter) rubbed well into the flour initially. Fat is what provides the flaky crunch. Next time, ensure right amount of hot ghee is added to the flour and rub it with your hands till it is well incorporated in the flour and easily forms a ball when squeezed in your palm before adding water.

  • Why are Chaklis fine after frying but turn soft after a day?

They likely weren't fried completely. Wait for the oil bubbles/sizzling to subside before pulling them out. Also, ensure they are 100% cooled to room temperature before sealing them in a jar. Even a tiny bit of residual heat will create condensation and ruin the crunch.

  • How long does homemade instant chakli last?

Instant chakli stays fresh and crispy for up to 2 weeks at room temperature. To maintain the best crunch, ensure the fried chaklis are completely cooled before sealing them in a dry, airtight container.
