Try and use a non-stick pan if possible as the mixture tends to stick.
Always use fine dessicated coconut and not a coarse one as the texture will differ and the Mango Coconut Truffles won’t taste as good.
Make sure to cook on low heat and roast desiccated coconut only till it turns a little warm; its colour should not change.
Cook whilst stirring constantly making sure that mixture doesn’t burn.
Once the mixture thickens and starts leaving the sides of the pan and forming a lump, check if you can easily form a ball. If you can then the mixture is cooked enough. Be careful whilst checking as mixture will be very HOT.
Remove the mixture in a plate as soon as it’s cooked enough to stop cooking it any further in hot pan.
Let the mixture cool down slightly, only till it’s cool to touch. Then make small balls and roll them on some desiccated coconut and viola your gorgeous Mango Truffles are ready just like that!!
