Salt that is used for the roasting process provides right amount of heat from all over to cashew nuts. And just the right amount of salt sticks to cashews when they are done, leaving the rest in the pan.


You can store this left-over salt after it cools down in an air-tight container and re-use later. Even if colour of salt changes, it can still be re-used later.

What a great way to roast cashews. I expect other raw nuts can be done this way, too. I roasted approx. two cups of nuts in two batches using the same 1/2 cup of hot Pink Himalayan Salt which is now back in a salt pig for later use. I added a little cinnamon sugar to part of one batch... all good.

That's really good to know that you tried this method and liked it. There is a slightly different technique to roast other nuts as the right amount of salt might not stick to them if they are just directly added to hot salt and roasted. I will soon create posts for other nuts as well.

Wonderful method. I used kosher salt and an enamel cast iron pan and it worked perfectly. Be patient, it took ten minutes for about 1/2 cup to brown but you will see them brown. The salt melts into the oils and when they cool they are crunchy, salty, and delicious!

I tried this but I had to add water to the nuts while roasting with the salt. It just wasn't sticking otherwise.


Just a light spray of water until I saw the salt start to coat the nuts.


I also did 4c of nuts to ½c salt.

Thank you for your comment. Salt in this recipe is used as a medium to roast cashew nuts uniformly from all over and not to coat them. Hence large amount of salt is used in this recipe so that cashew nuts get roasted evenly. Once cashew nuts are well roasted, they start releasing their oil and cashew nuts get flavoured with right amount of salt without making them overly salty, but giving them a subtle salty taste. The left-over salt in the pan, although changes its colour, can be recycled and reused many times in the future to roast cashew nuts/other nuts.


By using water to spray cashews so that salt can stick to them, crunchiness of cashew…
