What a great way to roast cashews. I expect other raw nuts can be done this way, too. I roasted approx. two cups of nuts in two batches using the same 1/2 cup of hot Pink Himalayan Salt which is now back in a salt pig for later use. I added a little cinnamon sugar to part of one batch... all good.

Wonderful method. I used kosher salt and an enamel cast iron pan and it worked perfectly. Be patient, it took ten minutes for about 1/2 cup to brown but you will see them brown. The salt melts into the oils and when they cool they are crunchy, salty, and delicious!
I tried this but I had to add water to the nuts while roasting with the salt. It just wasn't sticking otherwise.
Just a light spray of water until I saw the salt start to coat the nuts.
I also did 4c of nuts to ½c salt.
