Instant Rava Appe | Instant Semolina Appe

Scrumptious Appe have crispy outer layer and super soft interior. This instant version of traditional Appe recipe is made using semolina/rava and yogurt/curd/dahi and is ready in no time for a quick, tasty and healthy breakfast/snack or for kids’ tiffin.

Also known as Paniyaram, they are a staple breakfast in South Indian households and are served with either chutney of your choice or sambar.


Really Quick and Easy

Traditionally to make Appe, rice and urad dal (white lentils) are soaked and then ground to form a thick batter. This batter is then fermented for 7-8 hours or overnight. Then the tempering is added to this fermented batter and Appe are made using Appe mould. As you can see this is a long and time consuming process.

But with this Instant Rava Appe recipe, hours of soaking, grinding and fermenting is cut short and Appe are ready in no time at all, making them perfect for busy mornings.

Add colour as well as flavour

Yogurt (Dahi/Curd) adds a slight sour taste, making this instant version of Appe taste just like the fermented one.

Finely chopped ginger really enhances the flavour, especially when you bite onto small ginger pieces. Coriander (cilantro), not only builds on the flavour but adds colour too.


Tempering of mustard seeds (rai) and curry leaves along with other ingredients adds extra flavour to plain semolina / rava / suji.


You can include a variety of veggies to add more colour as well as to make these Sooji Appe more nutritious.


Making them fluffy

To make these instant Rava Appe fluffy, one most important ingredient is Baking Soda. As these Appe are not made from fermented batter, if you want them to be soft and fluffy, you have to add baking soda or they might become hard!

Baking soda should be added right at the end, just before making appe, after the appe pan is hot. DO NOT overmix after adding baking soda. Mix the batter gently and immediately start making appe.

Appe are made using a special Appe pan which has small round wells. This Appe pan is easily available in any Indian store. Spoonful of prepared batter is poured into the wells of hot Appe pan and cooked over medium heat until golden brown from bottom. Then they are flipped over and cooked till golden brown from other side as well and then served hot.

Step-by-step instructions with photos for Instant Rava Appe:

In a bowl add semolina (Rava/Suji), ½ tsp salt, yogurt (Dahi/Curd) and ½ cup water. Mix well and keep aside for half an hour.

Heat a pan on medium setting and add oil, mustard seeds (Rai), curry leaves (Kadi Patta), ginger, green chillies, onions and cook till onions turn slightly soft.

Saute Ingredients

Then add green peppers / capsicum (optional) and cook till they turn slightly soft as well.

To this add carrots (optional) and salt, mix well and keep aside till it cools down.

After semolina mix has rested for half an hour, add some more water (around 2 TBSP or as needed), little at a time, to form a thick consistency batter.

Then add cooled roasted vegetables, cilantro (Coriander) and mix well.

Finally add baking soda and mix gently – DO NOT Overmix. Start making Appe IMMEDIATELY.

Heat Appe pan on medium setting. Add few drops of oil in each mould and spread it with a brush.

Pour some batter in each mould.

Cover and cook till Appe are golden brown from below.

Then flip them over and cook till they turn golden brown from other side as well.
