Heart of Jeera Chicken – Cumin Seeds
The star ingredient of Jeera Chicken is cumin seeds (also known as Jeera / Zeera in Hindi) which gives it a distinct earthy flavour and aroma. Cumin is a staple spice in Indian cooking and is used in many dishes. It is known for its unique warm, earthy flavour and has a number of health benefits, including helping in digestion.
Always roast cumin seeds until golden and aromatic and then crush them slightly in a mortar and pestle. Don’t be tempted to grind them as it won’t add the texture which really elevates this dish.
Other ingredients in this Zeera Chicken recipe include, of course, chicken. Choose bone-in chicken pieces as they offer richer flavour. Always marinate the chicken for at least half an hour with spices like cumin powder, black pepper powder, red chilli powder, ginger garlic paste, etc. which offer warmth and depth to this Indian dish.
As this is a Dry Chicken recipe try and use a heavy bottom or non-stick pan to cook so that the ingredients don’t stick to the bottom and burn.
Cook sliced onions until soft, shiny and golden as they offer natural sweetness to this dry Jeera Chicken Tikka to balance out the spices.
Then add marinated chicken and let it cook until soft and tender. Finish off with garam masala, lemon juice, crushed cumin seeds, and cilantro / coriander.

Step-by-step instructions with photos for Jeera Chicken:
• Take chicken in a bowl and add 2 tsp salt, turmeric (Haldi) powder, cumin (Jeera) powder, black pepper (Kali Mirch) powder, red chilli powder, garlic paste and ginger paste.
• Mix well and let chicken marinate for at least half an hour.
• After half an hour roast 2 tsp cumin (Jeera) seeds on low heat until golden and aromatic.
• Crush them slightly in mortar and pestle and keep aside.
• Heat a heavy bottom or non-stick pan on medium setting and add oil, 1 tsp cumin (Jeera) seeds, curry leaves (Kadi Patta), green chillies and mix.
• Add onions, salt and coriander (Dhaniya) powder and mix well.
• Cook till onions turn shiny and soft.
• Add marinated chicken and mix well.
• Cook till moisture has evaporated and chicken is soft and tender. When you cut a piece of chicken, it should be soft and white from inside and NOT pink.
• Then add garam masala, lemon juice, roasted and slightly crushed cumin seeds (Jeera) and cilantro (Coriander).
• Mix well, switch off the heat and serve hot.
